MASTERCLASS SERIES 2022: March Session | 5×5 Wine & Cheese

Wine and cheese, cheese and wine? Whichever way, they are ‘SOU’ good together!

 

In this 30 minute session, we play cupid with wine and cheese! Taste five unique wines including two new releases and our pre-release reserve 2021 Equilibrio Chardonnay, each matched with their ideal cheese accompaniment. Five perfect matches made in heaven!

2020 SV Blanc de Blanc, $28 + Auricchio Pecorino Pepato
Aromas of sherbet and citrus abound with hints of grapefruit and tropical notes. Some complexity on the front palate with the tingle of mineral acidity balanced by sweet, stone fruit flavours. The finish is dry and crisp with some textural aspects from the secondary fermentation.
THE CHEESE: Pure sheep’s milk cheese from Sicily, flavored with whole black Sicilian peppercorns.

2021 Equilibrio Chardonnay (Pre-release), $80 + Jean Perrin St Vernier
Nuances of white flower, vanilla and grapefruit combine on the nose with undertones of struck match and toasted hazelnuts. The palate is still youthful with great persistence and tight minerality and is showing excellent structure with fine balance.
THE CHEESE:  This orange rind has been washed with locally produced Savagnin which adds a slightly fruity flavour, balancing its pungent aroma.

2021 SV Pinot Noir-Syrah (New Release), $35 + Mauri Taleggio
‘Fruit balance, crunch and vibrancy.’
A blend that has a great heritage in Australian winemaking, could simply be the middle ground when trying to create a light dry red; the place where the nervous tension and acid of the Pinot helps make the spicy, tannic Syrah fundamentally softer and more approachable.
THE CHEESE: Washed rind cows milk cheese, considered one of the finest DOP cheeses made in Italy, has a creamy texture and yeasty flavour.

2020 SV Cabernet Sauvignon (New Release), $40 + Papillon Roquefort
The wine is full of defined blackcurrant flavours with the trademark Yarra Valley savoury edge. The fifteen-month aging in barrel, 30% new, has integrated the wine which displays silky tannins, length and power.
THE CHEESE: The oldest traditional French blue cheese, made from raw sheep’s milk and matured in the ancient underground caves of the Cambalou plateau.

2020 SV Botrytis Viognier, $32 + Occelli Testun Di Barolo
This dessert wine is delicously sticky and sweet. Savour in the aromas of honeyed peach, candied ginger and spiced oak. Perfect for an afternoon of cheese nibbling and slow sipping!
THE CHEESE: A Piedmont specialty, this cheese is aged in traditional wooden barrels containing the grape skins of Barolo.
