Soumah Premium Wine Experience

Our Premium Wine Experience exemplifies the passion at Soumah for impressive wine and palate heightening encounters. Your sojourn begins in our Premium Wine Room designed with luxurious furnishing to ensure your comfort and relaxation while you venture into the curated wine sampling.

Seated Tutored Tasting

We have designed a distinct Premium Wine Room where you will be treated to an exclusive tasting designed with your preferences in mind, selected from our reserve quality, limited production and European imported range of wines. This experience is priced at $25 per person and is not redeemable on purchase.

The Premium wines on tasting will vary from day to day although will generally be two white and four red wines. The wines selected are chosen from the below ranges and styles.

Piccolo Tasting

Prefer to go at your own pace? We have designed a self-guided tasting experience of five wines, accompanied by a ‘Piccolo’ plate of small bites selected from our current menu, while seated in our Premium Wine Room. This experience showcases some classic examples from our wide range of wines as well as giving you a taste of what is on offer at Ai Fiori Trattoria.

Available 11:30am to 3:30pm daily
$25 per person. Maximum 10 guests.

Soumah Premium Wine Experience

Our premium wine experience will feature a selection of wines from the following range:

Museum Wines

We keep a small museum wine selection from each vintage, storing these in in the best conditions to ensure they age gracefully fully developing their individual brilliance. From time to time we might choose one of these beautifully aged wines (minimum five years old) as part of our Premium Wine Experience line up.

Equilibrio Range

The concept behind our Equilibrio range is to promote the very best barrels, clonal mix and new oak integration to create a few cases that will benchmark each vintage potential. Some would call it Reserve but we call it Equilibrio as, at the end of the day, it is all about harmony and balance. We have a Chardonnay, Pinot Noir and Syrah in our Equilibrio range.

Nebbiolo

Although our Nebbiolo is on a north-west slope it still ripens last in our vineyard as we wait for the characteristic high acid levels to slowly drop. The fruit is then hand-picked, fermented in tank and then left on skins for an extended maceration to soften the red wine. It is then racked to only large format seasoned barrels (minimum 500l) where it will then slowly mature for at least 18 months. We only make small amounts of Single Vineyard Nebbiolo and our 2015 Vintage received a rating of 96 Points from Huon Hooke who went on to say “Authentic Nebbiolo, utterly convincing. Really quite spectacular”

The Butcher

With this wine we add a modern twist to an age old Australian blend to create a rich flavoursome wine red wine. The Syrah delivers the fruit, the Cabernet adds a savoury focus and the Nebbiolo brings it all together with elegant structure.

Italian Imports

At Soumah we import some unique Northern Italian wines and market these to high quality bottle stores and Italian restaurants in Melbourne. From time to time we might also display one of these wines on our line up. These wines include Barolo (Nebbiolo), Nascetta (ancient white variety from Piedmont) and Marzemino, Teroldego and Lagrein which are all reds emanated from Trentino.
