2017 Soumah Single Vineyard Sauvignon Blanc

Sauvignon Blanc needs a cooler climate like the Yarra Valley to produce at its best. Our patch of vines also benefits from being planted on an eastern slope at about 130 metres enjoying the cooling breezes descending from the Warramate Hills throughout the summer evenings.

Varietals: Sauvignon Blanc

Clone: F14V9

Harvest: 15 March, 2017

Baume at Harvest: 11.7

pH at Harvest: 3.4

TA at Harvest: 6.5

We endeavour to make a textural wine by suspending the lees (dead yeast) in the wine for a few months giving a fuller mouth-feel while still retaining the Sauvignon Blanc crispness. The wine is herbaceous & clean. Lively flavours of passion fruit and lychee wash over the palate as its finishes with soft fine acidity.
