VINTAGE 2022 UPDATE: Thursday, 10 March

Sou-Good, Sou-Far!

Vintage is well and truly underway, both in the vineyard and the winery. All the whites have been harvested and are slowly fermenting in either stainless steel tanks – Savarro and Pinot Grigio, or oak barrels – Chardonnay and Viognier. Our Pinot Noir has also been picked and is still fermenting on skins in tank, being gently pumped over daily to extract the best flavour and colour. The Brachetto has been cold soaking on skins to gain that beautiful pink colour the wine is known for and has now been pressed off to ferment in stainless steel. This will retain the fresh aromatics and delicate flavours we desire.

We are fortunate to be able to keep all our clones from each variety we grow as separate ferments and we won’t blend until closer to bottling. This creates a more complex and interesting wine, allowing us to select the very best barrels and clones for our Equilibrio range, followed by the Single Vineyard series and the balance goes into our more approachable d’Soumah wines.

In the coming week we plan to harvest Syrah and then we wait a few weeks for the later ripening reds – Cabernet, Nebbiolo and Marzemino. While our yields are down, the quality and flavour of each variety is rated highly. Hopefully this trend will continue as the wines finish ferment and are packed away for maturing slowly over winter.
