Seated in the comfort our of Premium Wine Room, join our knowledgeable team in a conversational comparison of reds including Syrah, Cabernet, Nebbiolo as well as some of our interesting Italian imports not usually available for tasting. Experience the subtle nuances and learn why these wines belong in your cellar!

2020 SV Syrah, $40
An aromatic bouquet of lavender and violet leading to a savoury palate highlighting intense cherry, blackberry and plums. Some hints of leather and tobacco coming from the new oak and finished with fine grained tannins and good length.

2019 Equilibrio Syrah (Pre-release), $80
Savoury aromas of brooding black and blue berry fruits come from the Bests clone and this adds spice to the palate. We select R6WV28 clone for its elegant structure and powerful tannins, bringing a richness to the overall wine. A small portion of whole bunch ferment adds fresh herbal intrigue to the wine. Matured in a selection of Puncheons (500L) and Barriques (225L) for ten months before bottling without fining or filtering.
“Very deep, concentrated red/purple colour. Smoky, spicy and savoury to sniff, the palate soft and fleshy with a core of sweet fruit in the centre, intertwined with a vegetal—possibly whole bunch ferment—character. There’s an almost syrupy lusciousness in the middle. A good and somewhat quirky style, delicious and dare I say Rhône-like.” — Huon Hooke, The Real Review | March 2022

2020 Cabernet Merlot d’Soumah, $28
An elegant Cabernet Merlot displaying prominent blackcurrant fruit flavours combined with dark plums and hints of tobacco and cedar. The structure and fine tannins from the Merlot add a charming softness, while the smooth and savoury finish is characteristic of the Yarra Valley.

2020 SV Cabernet Sauvignon (New Release), $40
The wine is full of defined blackcurrant flavours with the trademark Yarra Valley savoury edge. The fifteen-month aging in barrel, 30% new, has integrated the wine which displays silky tannins, length and power.

2019 Ellena Guiseppe Nebbiolo (New Release), $39
Grown on calcareous soils at about 280 meters the grapes are fermented with wild yeast. Malolactic fermentation is carried out in tank before maturation in seasoned oak. A great example of an approachable Nebbiolo at the right price.

2019 Single Vineyard Nebbiolo (New Release), $50
Perfumed raspberry and violets are balanced by earthy undertones. Rich on the palate with silky tannins and a long, complex finish. A beautiful example of Yarra Valley Nebbiolo!

2018 The Butcher (Museum), $60
Here we combine the finesse of the Yarra Valley and the depth and richness of Heathcote. The Syrah delivers the fruit, the Cabernet infuses a savoury focus and the Nebbiolo brings it all together with elegant structure.
“It’s a slightly burlier red than this blend might have you expect, but it’s well balanced, well made and looks set to go well in the cellar. Red and black berries, jubey aspects, florals, woodsy spices and malt. It’s not thick or heavy but it feels strong. 94 Points.” — Campbell Mattinson, Halliday Wine Companion

2015 Castelnuovo Amarone  (New Release), $89
The grapes have been selected and dried for about 4 months then aged in 5,000 L oak casks 1 year. With a deep ruby red colour, the wine is intense with an ethereal quality and the scent of black cherries, concentrated velvety finish.
